Update some themes

Move git config to secrets folder

Move more packages from general to gridx

Move more packages that I only use at work to the gridx profile.

Add back .git-crypt folder

Include email config

Add jj configuration

Add more work tooling

Use proper portal config

To get this working a I needed to add a niri-portals.conf. Later this
will come from the niri-portalsconf package

Move back to spawn with niri

Add 1 git-crypt collaborator
